
Hola! Beat the January blues and keep up with the diet with this dish. All the flavours of the Iberian coast wrapped up in one dish. Totally clean, totally delicious. And what’s more, it’s so easy to make – the perfect post work meal. (and there’s enough for lunches too)
Serves 4
- 3 lean turkey breasts: cut into 2cm chunks
- 3 red peppers: deseeded and cut into 2cm chunks
- 1 large sweet potato: peeled and cut into 2cm chunks
- A large handful of baby tomatoes: cut in half
- 4 garlic cloves, whole
- 3tsp cumin seeds
- 2tsp paprika
- 3 strands saffron
- Salt & pepper to taste
Pre-heat the oven to 180.c
Chop everything up and put in one large roasting tin. Sprinkle spices all over, and toss to make sure everything is evenly covered.
Place in the pre-heated oven for an hour, turning the veg and turkey half way through.
Serve on its own if you’re being really clean, or with a large rioja if you’re not.
