Orange, lime, chilli and seabream ceviche

Currently my favourite food, I set myself the challenge to learn to make it. Clean, delicious and so bloody good for you.

Recipe lifted from the Guardian website.
250g fish (seabream, cod), deboned, deskinned and cut into 2cm long strips.
1 tsp sea salt
1 red onion, chopped into thin strips
1 red chilli, reseeded and chopped finely
1 large orange
4 limes
Coriander, small handful
Serves 2 as a main meal, or 4 as a starter
Chop all your ingredients.
Put the onion in a bowl of ice water and leave for 5 mins. Drain and set aside when done.
While that’s chilling, juice the orange and limes in medium bowl. Add the chilli.
Rub the salt into your chopped fish.
Add the fish and onion to the citrus bowl and make sure all the fish is covered.
Leave for 10 mins or until the fish has cooked through.
Serve in bowls and scatter coriander over.
