This is a wonderful summer lunch. It’s one of my favourites. Packed full of goodness and vitamin C, gazpacho is a quick and easy solution!
Makes about 4-6 servings depending on how much you guzzle.
  • 1kg tomatoes
  • 1 red pepper
  • 1 green pepper
  • 1 medium cucumber
  • 2 garlic cloves
  • 150ml virgin olive oil
  • 2 tbsp sherry vinegar
Dice the tomatoes, peppers (deseed them) and cucumber. Crush the garlic cloves.
Add everything into a food processor and whizz till smooth.
Serve with some delicious wholemeal bread and olives on the side. YES THANKS.
