- 2 x leeks
- 4 x slices of honey roast ram
- Handful of spinach
- 4 x medium eggs
- 1/2 cup soya milk
- Salt and pepper to taste
Prep
Chop the leeks up.
Chop the leeks up.
Cut ham into squares.
Pop the oven on and preheat to 150 degrees.
Cook
Using coconut oil, quick fry the leeks until softened (around 5 mins).
Add the spinach and stir till it wilts.
Remove from the heat and pop this mix into another bowl, and leave to cool for 5 mins.
In a mixing bowl, beat the eggs together.
Add soya milk and salt and pepper. Mix it real good.
Add ham, then the leek and spinach.
Mix everything together.
Pour mixture into shallow serving dishes and bake for 15 mins (the egg needs to be cooked – so just keep an eye on it and cook till it’s done)
