I saw this recipe on a great instagram I follow, who’d seen it on another clean eating page they rather like. I’ve made a few tweaks to cater to my own tastes, but however you make them, these balls will make guests go: “huh?” (When you tell them what you’re making) Then “hmm…” (when you give it to them). Then “oh wow” (when they eat them).
Makes 20 meatballs
500g x lean turkey mince
1 x avocado, cut into 1cm squares
1/2 tsp x rock salt
1tsp x pepper
1tsp x cayenne pepper
2 x garlic cloves, crushed
1 x egg
Grated Parmesan to serve
1 x red onion, chopped thinly
Baby tomatoes, cut in half
Oil and balsamic dressing
Pre-heat oven to 200c
In a bowl mix the meat and seasoning together.
Add the egg and im using your hands knead everything together.
Make a thin patty of meat mix and place a piece of avocado in the middle.
Wrap the meat around the avocado and roll into a ball.
Place on foil lined tray and bake for 30 minutes, turning half way until golden brown all over.
Serve with a salad and grate a bit of hard Parmesan over it. Bask in the glory of making healthy meatballs.
