Spicy black beans

I am a sucker for black beans. When we eat out for Mexican I always get a bowl to myself, even though it sure as heck ain’t good for your body. It is, however good for your soul.

So, what’s the answer when you have a ‘treat’ food you love but know you shouldn’t really eat? Make your own damn stuff at home that you can.

See below, and be happy.

Serves 2

  • 2 x tins black beans
  • 1 x chopped tomatoes
  • 4 x garlic cloves, minced
  • 1/2 fresh chilli (and seeds), chopped finely (red or green, depending on how hot you can handle it)
  • 2 tsp x cumin
  • Splash lemon juice
  • Rock salt and pepper to taste

Use a saucepan with a lid.

On a high heat, add the chilli, garlic, tomatoes and black beans. Mix well.
Add the cumin, salt and lemon, mix again.
Bring to the boil, then put the lid on and turn the heat down by half.
Simmer for 30 minutes, stirring occasionally. Turn the heat down if the beans start to become too dry.

Voila! Serve with Peri Peri Chicken.
