No-crust Aubergine, pepper and goat’s cheese quiche

This is such an easy clean eating win. Protein, veg, make in advance and eat cold, have hot, have with a salad, change the veg to whatever you love, and on and on and on.
And it’s so cheap to make.

For 1 person:
  • 1/2 aubergine, chopped into small chunks
  • 1 x red bell pepper, chopped into chunks
  • 1 x garlic clove
  • 1 tsp x oregano
  • Salt and pepper to taste

Egg mix:

  • 2 x medium eggs
  • 50ml almond milk
  • Salt and pepper to taste
  • 25g x goats cheese, chopped up

Heat oven to 180c

Chop up your vegetables, and put into a roasting dish with the garlic and seasoning.

Roast for 20 minutes.

In a separate bowl, mix the egg mixture together.

Once the vegetables are cooked, put them into a small casserole dish.

Crumble the goat’s cheese over the vegetables, and pour the egg mix over.

Cook in the oven for 20 minutes, or until the egg mixture is cooked through.

Eat hot, or leave to cool and have cold!
