Roasted pepper and tomato chilli soup

This is the perfect winter warmer. Full of flavour and packed with nutrients you can’t go wrong with it, and as it’s home-made, It’s 100% clean. Even better – freeze the left overs (in soup bowl amounts) for future quick lunches! I love having these to hand when it’s cold, you don’t want to cook and that take-away menu is looking oh so appealing…

Ready for the “how to?”

Serves 4

  • 3 x red peppers
  • 6 x tomatoes
  • 2 x garlic gloves
  • Salt
  • Pepper
  • 2 x tsp easy chilli (or 1/2 x fresh chilli)
  • Water (optional)

1. Oven at 180
2. Chop peppers and tomatoes up roughly. Bake in oven for 30 mins with the garlic.
3. Put into a blender with the salt, pepper and chilli.
4. Blend till smooth.
5. Serve, or add water to thin down if you like a smoother soup (do this in a sauce pan)
