This is one of those healthy meals you just go, oh dayam, how have I not been making this all the time. So satisfying for the soul, the waistline and the purse.
Tacos are amazing, everyone knows that, but they are usually one of the worst things to eat if you’re on a diet. With a few simple replacements you can chow down with the best of them, and be really smug about it too.
Makes enough for 2-3 people
- 500g lean turkey mince
- 1 x iceberg lettuce
- 6 x tomatoes, chopped small
- 1-2 x red pepper, chopped into strips
- Natural yoghurt, to serve (no more sour cream!)
- 2tsp x hot chilli powder
- 1tsp x garlic powder
- 1tsp x onion powder
- 1tsp x cayenne powder
- 1/2tsp x cumin seeds
- 1 tsp paprika
- 1/2tsp x salt
- 1/2tsp x oregano
Mix seasonings above in a small bowl. Put to one side.
On a high heat, brown the turkey mince.
Sprinkle over your taco spice mix, making sure the meat is evenly covered.
Add 1/2 cup water.
Stir to mix the seasoning in, and bring to the boil.
Turn down to a medium heat and simmer for 15-20 minutes. Add a bit more water if needed, but you want the final mix to be sticky, not wet.
Chop up your vegetables.
Peel the lettuce so you have individual big leaves. You’ll be using them instead of wraps.
To serve, layer the meat, yoghurt and vegetables inside a lettuce wrap.
Wrap up, eat.
