Eating clean doesn’t have to be plain salads and cold tomatoes. The number one thing I like about this lifestyle is that you can take any comfort food and find a clean way to eat it. You don’t have to miss out on anything!
Last weekend I needed some comfort food. It’s cold, it’s not quite spring, and I wanted that lazy Sunday lunch feeling. I wanted Shepherd’s pie.
Two very simple changes and voila; clean!
You can also do a half and half like in the photo if your other half wants a more traditional pie 🙂
The below makes enough for four, we doubled up and had it two days running – making Monday evening post work dinner smooth sailing.
Serves 4
- 500g lean Turkey mince
- 5 x carrots, chopped small
- 1 x white onion, chopped finely
- 2 x garlic cloves, chopped finely
- Shepherd’s pie mix
- 2 x tbs balsamic vinegar
- 2 x medium sweet potatoes
Heat oven to 180c
Meat
In a big pan, brown the onion, Turkey and garlic.
Add the carrots, shepherd’s pie mix and balsamic
Bring to the boil, then turn down to a simmer as you finish the potatoes.
Potatoes
Chop potatoes into small chunks and boil until soft (15-20 mins)
Drain, put back into the pan, and mash until smooth.
Pie
Pour the Turkey mix into a casserole dish.
Layer the mash over the top.
Cook for 30 minutes.
