
Made with only nuts and fruit there is nothing bad in these, yet they taste like a naughty chocolate treat. That’s the best combination for us clean eaters.
These take 20 minutes to make, and if you store them in a nice container they’ll last for a week.
Makes 10-14 bites.
- 150g pitted dates
- 1/4 cup whole cashews
- 20ml water
- 25g desiccated coconut
- 1-2tbs carob (for bitter dark chocolate flavour) or cacao (softer chocolate flavour) powder
Pre-heat oven to 180c.
Add the dates, nuts and water to a blender. Blend until you have a chunky paste.
Add in the carob/cacao powder and coconut. Blend till the mixture is all brown.
Spoon out in to a bowl, and using teaspoon sized amounts of mixture roll the mix into small balls.
Lay on a grease-proof paper lined tray and cook at 180 for 12 mins.
Leave to cool.
Eat and be happy.
Alternative versions!
Make the same as the plain version, but once you’ve transferred to a bowl add in…..
Choco-chilli bites
1 tsp hot chilli powder. Mix well. This works really nicely with the carob powder.
Salted chocolate
1 tsp rock salt. Mix well.
Once you’ve rolled into balls sprinkle a few kernels over the balls.
