Garlic avocado dip (for open sandwiches!)

A big part of my weekly food planning is ‘what am I going to have for lunch at work?’. It needs thought – something that I won’t get bored of by Wednesday, something I can either make in one go on Sunday, or take in a bag and make up all week. It needs to be easy, or I’ll go out and buy something, or snack later on. Preparation is King.

A couple of weeks ago I made this delicious dip, perfect for snacking and dipping carrots into. It’s totally clean, a great source of good fats, and goes with almost anything!

I used it in an open rye sandwich for my lunches: Rye bread, spread around 1/2 an avocado’s worth on it, some ham, and a poached egg. A perfect balanced meal!

Makes a small pot amount

  • 2 x avocados
  • 2 x garlic cloves, minced
  • 2 tsp x lemon juice
  • 1 tsp x easy chilli / chilli powder
  • Pinch salt and pepper

Add all the ingredients to a blender and blend until smooth. Scoop out into a nice bowl, and serve, or transport in your lunchbox!

Great for:

  • Sandwich spreads
  • Pasta sauce (with tomatoes and basil leaves)
  • Snacking dip

Perfect: easy, clean, delicious.
