Stop everything! Clean cookies! Keep this one up your sleeve, and prove to the world that eating clean and healthily doesn’t mean missing out on delcious treats. I love these, and they are so easy to make I can genuinely think “ooh, I’d like a biscuit” and have these ready to eat in 30 minutes. What could be better than that?
- 1/3 x cup coconut flour
- 2 x medium eggs
- 2 x tsp vanilla essence
- 1/3 x cup dried cranberries/sultanas/dried fruit of your choice
- 1 x tsp baking powder
- 1/3 x cup melted coconut oil
- 1 x tsp Agave (if you have a sweet tooth, I think the fruit makes it sweet enough)
Pre heat oven to 170 c
Mix everything into a large bowl, the coconut flour will absorb the egg and oil mixture greedily.
Line a baking tray with grease-proof paper and spoon out your cookies.
Bake in the oven for 15 minutes.
Remove from the oven and allow to cool for 10 minutes – enjoy!
You could also use chocolate chips instead of fruit, for a little extra treat.
I’m going to have to make these this week. I’ve needed to find a responsible cheat food, and I think this one’s a winner! Ceinwen, Can I ask what the difference is between vanilla extract and vanilla essence? I can’t wait to try these with some carob chips!
