Choco banana cake

The Great British Bake Off is back tonight.

“Hooray!” the whole of Great Britain exclaims.

#GBBO is one of the greatest reality/competition/cookery programmes and I think any of us on this small Isle would fight to the death about that. Death by chocolate perhaps.

I started eating clean 18 months ago, so avoided the last series, finding the stream of delicious cakes, pastries, pies and puddings unbearable to watch knowing I couldn’t eat any, and didn’t know enough about cooking to bake my own. This year I’ve got many healthy cakes up my sleeve so, in honour of sitting back and watching the pouring, sieving, whipping and caking over the next 12 weeks I’ve made the ultimate health cake: no gluten, no dairy, no chocolate, no refined sugar…yes Sue, it’s a vegan choco-banana cake. Eat up my friends, eat up and be smug, for this beauty contains #noguilts.

  • 3 ripe bananas
  • 2 tsp agave syrup
  • 3 tbs cacao powder
  • 40g coconut oil
  • 1 tsp baking powder
  • 150g buckwheat flour
  • [egg replacement mix – per ‘egg’ needed] 1 tsp baking powder, 1.5 tbs vegetable oil. You need 2 x ‘eggs’ for this recipe.

Pre-heat the oven to 180c.

Melt the coconut oil.

In a large bowl, mash the bananas. Add the coconut oil, agave syrup, baking powder and ‘eggs’.

Using an electric whisk, mix everything together. Fold in the flour and cacao powder slowly, and mix until everything is evenly brown.

Pour into a lined cake tin (I use a silicone mould!) and bake for 30 minutes.
