Ahh Italy, home of my most favourite food. I think I like anything and everything the Italians make; and nothing beats breakfast, lunch and dinner in Italy itself! Back in April we went on a bit of a tour of the country, at one point staying in Sorrento very nearly at the home-town of the Caprese Salad. Well…the tomatoes were the freshest I’ve ever eaten, and the mozzarella, oh Marone!
I can’t say the tomatoes and cheese in the UK are a patch on the fresh stuff over there, but you can whip up a taste of holiday in a jiffy. It’s a wonderful starter or quick summer lunch that will only take you 3 minutes to make. Bella!
Serves 2
- 4 x ripe tomatoes
- 125 g x fresh mozzarella
- Handful of fresh basil leaves
- Salt & pepper to taste
- Drizzle virgin olive oil
Slice the tomatoes and mozzarella into 0.5cm slices.
Lay out on a plate, alternating tomato and cheese. Spinkle salt and pepper over.
Drizzle the oil and add a few basil leaves.
Serve, eating tomato, basil and cheese together. Delicious!
