Quick, easy, healthy, delicious. Chia puddings are the best. Chia seeds are one of those superfoods that you should just have in your cupboard at all times. I add them to nearly everything for a quick boost. They are packed with nutrients, antioxidants, protein and fibre, and by soaking them you bump up their size, making you feel full and satisfied. I love making these the night before for breakfast, and recently started making them at work in the morning for my afternoon snack. Perfect! They take not even one minute to make – what’s not to love!
Makes 1 chia pudding.
To get a nice consistency in the pudding, use approx. 4:1 of liquid to seeds.
- 1 cup almond milk
- 2 tsp vanilla essence
- 1/4 cup chia seeds
- Handful of strawberries or raspberries
Mix the chia seeds, milk and essence together. Stir well.
Cover, and put in the fridge for 3-4 hours (overnight is best!). The chia seeds will absorb the liquid and make a pudding like consistency.
Serve directly from the fridge, with fruit on top!

Hi Ceinwen, I’ve used chia seeds in a quite a few recipes, but I’ve never just made straight pudding with them. Recently I’ve seen different kinds of chia seeds, though. Do you have a favorite (white, black, etc) for this recipe? Also, have you ever tried another flavor of pudding other than vanilla? Thank you for all the help and for such a fantastic snack idea!

I love mixing in cacao powder for a healthy “chocolate” pudding, and I’ve tried orange before which was quite nice. Cinnamon too. They are so versatile that really any flavours you like will be yummy!
I always use black chia…because that’s what my local shop sells. 😀 xx
