Spicy kidney bean burgers – vegan friendly!

Vegan Spicy Bean Burger

All hail the bean burger. This is a great weekday dinner; so simple to put together and full of good energy. Now Autumn is drawing in, these are the sorts of hearty meals you need after a long day at work. Serve with peas and sweet potato fries for a great ‘kids dinner’. Happiness.

Serves 2 (with a side salad/vegetables)

  • 2 x cans of kidney beans
  • 1/2 x white onion, chopped finely
  • 2 x garlic cloves, chopped finely
  • 1/2 – 1 x fresh chilli, chopped finely (increase / decrease depending on how hot you can handle it!)
  • 1 x tsp oregano
  • 1 x tsp paprika
  • 1 x tsp cayenne pepper
  • Salt & pepper to taste
  • 2 x tbs almond flour
  • Cornflour to dust the burgers

In a frying pan, add the garlic, chilli and onion. Fry until the onion is soft.

While that’s going on, rinse the beans and add to a large mixing bowl. Mash them.

Add the remaining spices to the beans and mix well.

Once the onion mix is cooked, tip into the beans and stir in.

Add the almond flour and mix well together. This will act as a binder for the bean mix and keep your burgers….as burgers. Don’t miss this step.

Cover, and leave in the fridge for 15-20 mins.

Remove from the fridge and split the mixture into quarters. Roll each quarter in your hands and pat down into burger shapes. Dust each side with cornflour. Put on a plate to the side as you do the rest of the burgers.

Once all your burgers are ready, heat your frying pan to a medium heat.

Add the burgers, and fry for 5 minutes on each side, until golden and crispy on the outside, and hot in the middle.

Serve with your favourite vegetables or a side salad!
