Weekday, workday breakfasts. If I’m being good that morning, I’ve got up at 6am for the gym. If I’m not going to the gym, I’ve usually not got up with enough time to sit down for breakfast at home. Either way, I need something I can grab and go.
My ‘breakfast d’jour’ at the moment is bircher museli, it’s so versatile and so simple to make. I make it in the evening as I’m cooking dinner, or throw it together really quickly before bed if I’ve been out that night. Then it’s just grab, go, and eat. Delish.
Serves one.
- 40g rolled oats
- 40ml apple juice
- 2tbs chia seeds
- 5g desiccated coconut
- 1 medium apple
- Splash almond milk
- (optional) 1tbs greek yoghurt
In a sealable pot, add the oats, apple juice, chia and coconut. Mix well.
Put in the fridge over night.
In the morning, add the splash of milk and stir. This will loosen the oat mixture up. Chop or grate the apple up, and mix into the oats.
Eat, adding a spoon of yoghurt if you’re a bit more hungry 🙂
