Oh oh oh oh omega-3! This is PACKED with goodness, super quick to make AND if you’re prepared it lasts overnight in a lunchbox for a work-time lunch. Huzzah!
Serves 2
- 2 fillets smoked mackerel, sliced
- 70g rocket
- 4 x beetroots, chopped into chunks
- 50g feta
- Handful pumpkin seeds
Dressing:
- 3 tsp x olive oil
- 3 tsp x white wine vinegar
- Salt and pepper to taste
Chop everything up and mix together in a big bowl. Divide amongst everyone and serve with dressing. Ja, that’s it.
Add diced pear and a peach. extra yummyness.
