Gym power: ‘Ferrero Rocher’ energy balls

Ferrero rocher energy balls

I make these and keep them in the fridge for the week – so easy to grab when you’re on the go. I tend to go to the gym before work which means a horrid start of 5.50am, and there is no way I want to eat at that time of the morning! These are a great solution, I nibble one on the way to the station or on the train and have a little energy boost to make getting up and getting in the gym count.

Inspired by the oh so delicious ferrero rocher chocolates, though I’ve not started to wrap them in gold foil yet…

Makes around 15 balls:

  • 250g dates
  • 100 g hazelnuts
  • 4 tbs cacao powder
  • 3 tbs desiccated coconut
  • 1 tbs chia seeds
  • 30g oats
  • 3 tbs water

In a blender, whizz the hazelnuts until they are roughly chopped up into small pieces.

Remove half of the nuts and set aside.

Add the dates (remove any stones), cacao, coconut oats and chia to the blender. Add the water and blend until smooth and a consistent brown colour.

Spoon the mixture out and roll into balls around 1 inch wide. Roll each ball in the remaining hazelnuts to get that rocher look 🙂

Keep in the fridge for a week, or in the freezer if you want to keep them a bit longer
