Turkey Mince. Lean, mean, clean.

I love chilli. Hearty and happy, it’s one of those meals that everyone (and I mean everyone, veggies look over here at my vegetable chilli) enjoys eating. We have chilli most weeks in our house – it’s a great weekday meal as usually it’ll do a few meals – and usually tastes better the second day!

Replacing beef mince with turkey knocks down the calorie and fat content, turkey is a great meat to eat as it’s lean and bursting with protein – a great post workout dinner! Eat with a carb of your choice – brown rice, quinoa, sweet potato, cous cous…

Serves 8. Approx. 280 calories per serving of chilli (+ your carbs!)

  • 500 g Turkey mince
  • 800g kidney beans,
  • 300g tomatoes, chopped roughly
  • 400g chopped tomatoes
  • 200ml water
  • 1 white onion, sliced thinly
  • 4 cloves garlic, minced
  • 1 red chilli, chopped thinly
  • 2 tsp cayenne
  • 2 tsp cumin seeds
  • 3 tsp oregano

 

In a large lidded pan, slowly fry the onion on a medium/high heat till it goes translucent (about 5 minutes)

Add the turkey mince, and fry till it is sealed through. Drain off any excess fat/oil.

Add the chilli, cumin seeds and garlic and mix well for 3 minutes.

Add the chopped tomatoes, kidney beans, and tomatoes. Mix well. Add the water, cayenne and oregano and mix again.

Put the lid back on and bring to the boil. Once boiling, turn down and leave to simmer for 20 minutes.
