Salmon & spinach gnocchi

Salmon gnocchi

Comfort food. This is one of my favourites. Last week I had the worst cold in ages, I could barely walk around for 20 minutes, and I certainly didn’t want to cook anything. Or eat anything. But also, I wanted to eat every single thing on earth all at once. Yeah it was one of those colds. So I ate this pretty much every day.

It’s great – warm potato gnocchi for comfort, delicious pan fried salmon for wellness boosting omega 3  and protein. And….it tastes amazing. Rounds up at about 500 calories for a big bowl if you’re hungry, or less if you don’t want as many pieces of gnocchi!

I love cooking gnocchi this way, it creates a really amazing texture difference with the crispy outside and soft inside – fantastic!

Serves 2

  • 500g potato gnocchi
  • 2 fillets salmon
  • 100g spinach
  • 2 shallots, sliced finely
  • 1 tsp easy chilli / 1/2 fresh chilli
  • 1 garlic clove
  • 1/2 tsp nutmeg

Get two frying pans ready on medium/high heats.

In the first, add the salmon fillets and fry until cooked (8 minutes or so)

While the fish is cooking, add a tbs of olive oil to the other pan. Add the chilli and the garlic to this and stir for 1 minute. Add the gnocchi. Cook the gnocchi for 10 minutes turning now and then so the outside becomes crispy.

Once the fish is cooked, remove from the pan and leave on the side to cool slightly.

Add the shallots and spinach to the fish pan and cook for 5 minutes. The shallots will start to soften and the spinach will wilt.

Flake the fish back into the shallot pan and mix well.

Add the cooked gnocchi to the fish pan and again mix everything together.

Serve as is or with a squirt of lemon juice over it.
